Mountain Odyssey Sandwich Cookies

Ingredients

Cookie:

  • 2 cups flour
  • 4 oz white chocolate chunks
  • ½ cup sugar
  • ½ cup butter
  • 3 oz cream cheese
  • 2 tsp vanilla extract

Buttercream Filling:

  • ½ cup soft butter
  • 2 cups confectioners sugar
  • 2 Tbl strong Mountain Odyssey coffee


Directions

  1. . Combine the flour and white chocolate in the food processor and pulse until chocolate is finely chopped
  2. . Add the remaining ingredients and process until a dough forms
  3. . Turn onto parchment – wrap and chill for about an hour
  4. . Pre heat oven to 350
  5. . Roll out dough and cut into 2” rounds ¼” thick and place on baking sheet
  6. . Bake until the cookies are lightly colored
  7. . Set on cooling tray
  8. . For the buttercream: Beat together the ingredients until light
  9. . Sandwich the cookies with the butter cream

Note: Cookies can be made ahead or frozen unbaked. Then later defrost or bake and sandwich with the buttercream
