Matcha White Chocolate Truffles
Ingredients You Will Need:
12 oz GOOD white chocolate [NOT coating]
4 tablespoons soft butter
6 tablespoons heavy whipping cream
1 teaspoon matcha
1 teaspoon brandy
12 oz DARK chocolate, finely chopped
1 cup finely chopped pistachios [optional]
Method:
Melt the white chocolate – butter – cream – matcha and brandy in microwave – 1 minute – or over gently simmering water. Stir until smooth
Chill in refrigerator for about 1 hour or until the mixture is cool and thick
Whisk the mixture until it stiffens. Form into teaspoon size balls.
Chill for 4 hours
Melt chocolate [1 minute in microwave or over gently simmering water]
Stir until smooth
Dip the white chocolate balls in the chocolate – set on parchment paper and chill in refrigerator
Optional: After dipping in chocolate – immediately roll the truffles in the pistachios
Chill and serve
Notes:
½ teaspoon of coconut oil added to the chocolate when melting, will make it easier to dip
