Colonel Grey Tea Jelly

Ingredients:
5 Tablespoons Colonel Grey Tea leaves
1 ¾ cups water
¼ cup fresh lemon juice
3 cups sugar
1 envelope Certo pectin
Directions:
Brew tea in water for 10 minutes then strain.
Combine the tea, lemon juice and sugar in a medium saucepan.
Bring to a rolling boil. Boil hard for 1 minute
Remove from heat and stir in the pectin – stirring to ensure it is well incorporated
Pour into clean jars. Allow to cool then refrigerate for at least 2 days before using.
Note: This is a soft jelly. If you prefer a jelly that is stiffer. Add another ½ envelope of pectin.
