Colonel Grey Tea Jelly


  • 5 Tablespoons Colonel Grey Tea leaves
  • 1 ¾ cups water
  • ¼ cup fresh lemon juice
  • 3 cups sugar
  • 1 envelope Certo pectin

  • Brew tea in water for 10 minutes then strain.
  • Combine the tea, lemon juice and sugar in a medium saucepan.
  • Bring to a rolling boil. Boil hard for 1 minute
  • Remove from heat and stir in the pectin – stirring to ensure it is well incorporated
  • Pour into clean jars. Allow to cool then refrigerate for at least 2 days before using.
  • Note: This is a soft jelly. If you prefer a jelly that is stiffer. Add another ½ envelope of pectin.
