Peach Infused Simple Syrup + Peach Ginger Mule Mocktail

Ingredients

  • 1 cup organic cane sugar
  • 1 cup filtered or bottled water
  • 2 ripe peaches (thinly sliced)

  1. Bring sugar, water, & peaches to a rolling boil in a small saucepan. Lower the heat and using a wooden spoon stir and crush the peaches to infuse the flavor
  2. When the sugar has dissolved completely, remove from heat, cover and allow to sit for 30-40 minutes.
  3. Ensure the syrup is cooled completely. Strain through a fine mesh strainer.
  4. The syrup will keep in a tightly sealed contained for up to a month in the refrigerator.
  5. Use the syrup in cocktails, to sweeten peach ice tea, over vanilla ice-cream, yogurt, or oatmeal.

Ginger Peach Mule Mocktail Idea:

  1. Fill ice in glass or copper mug.
  2. Add 3 tbsp peach syrup and the juice of a half a lime.
  3. Top with ginger beer.
  4. Garnish ideas: sprig of mint, candied ginger, or lime wedge.
