Mo-Tea-To Cocktail/Mocktail

Ingredients
- 4 grams fresh spearmint leaves (no stems)
- 5 tsp Sugar
- 0.7 oz Fresh lime juice
- 1 Tbsp Kukicha Green Tea
- 8 oz Heated, filtered water
- 3 Ice cubes
- 3 Lime wedges
- 3 Extra mint leaves for garnish
**To turn this recipe into a Cocktail, add 2 oz of light rum
Directions
- . Place spearmint and sugar in a medium bowl
- . Using a muddler or large spoon, muddle mint and sugar until mixture is aromatic and oils are released
- . Add rum and lime juice to mint/sugar mixture
- . Stir until sugar dissolves
- . Press mixture through a fine mesh strainer to separate liquid from solids
- . Chill mixture until cold
- . To make tea, add 175℉ water to green tea
- . Steep for 2 minutes
- . Remove tea leaves from liquid
- . To quicken cooling, put tea in freezer for 15 min
- . When tea is chilled, add mint/sugar/rum mixture to tea
- . Stir until mixed
- . To serve, pour liquid into a short cocktail glass and add a large cube of ice
- . Garnish each drink with a wedge of lime and a sprig of mint
