Lemon Verbena Simple Syrup and Lemon Verbena Gateau

Ingredients

Lemon Verbena Simple Syrup:

  • 1 cup water
  • 1 cup sugar
  • 1 cup Verbena
  1. Place all in a saucepan – bring to the boil then reduce heat and simmer gently for 10 minutes
  2. Cool and strain

Ingredients for Lemon Verbena Gateau:

  • 1 package lady fingers
  • ½ cup Lemon Verbena Simple Syrup
  • 1 cup cream
  • 2 tablespoons sugar

Directions

  1. . Brush the lady fingers liberally with the syrup
  2. . Whip the cream with the sugar until stiff
  3. . Arrange the ladyfingers in three rows
  4. . Spread the whipped cream between the layers
  5. . Top with whipped cream
  6. . Allow to chill at least overnight

NOTE

The syrup can be used to poach fruit or as a sauce over ice cream or a sponge cake
