Lemon Verbena Simple Syrup and Lemon Verbena Gateau

Ingredients
Lemon Verbena Simple Syrup:
- 1 cup water
- 1 cup sugar
- 1 cup Verbena
- Place all in a saucepan – bring to the boil then reduce heat and simmer gently for 10 minutes
- Cool and strain
Ingredients for Lemon Verbena Gateau:
- 1 package lady fingers
- ½ cup Lemon Verbena Simple Syrup
- 1 cup cream
- 2 tablespoons sugar
Directions
- . Brush the lady fingers liberally with the syrup
- . Whip the cream with the sugar until stiff
- . Arrange the ladyfingers in three rows
- . Spread the whipped cream between the layers
- . Top with whipped cream
- . Allow to chill at least overnight
NOTE
The syrup can be used to poach fruit or as a sauce over ice cream or a sponge cake
