Holiday Sablés (Biscuits)

Ingredients
- ¾ cup butter
- ½ cup sugar
- 1 egg yolk
- 1 cup flour
- 2 Tablespoons Baked Apple Almond tea
- ¼ teaspoon salt
- . Melt the butter together with the tea and allow to steep for 15 minutes – remove from heat
- . Allow to cool for 15 minutes then strain the butter – pressing the tea against the strainer to extract as much of the tea flavor as possible
- . Beat the flavored butter with the sugar then beat in the yolk
- . Blend in the flour and salt until a dough is formed
- . Pile the dough onto parchment paper, roll up to form a log 2” in diameter and refrigerate for 1-2 hours
- .Pre- heat oven to 350
- . Cut the log into 1/3” thickness
- . Set on a parchment paper lined cookie sheet. Bake for about 10 – 13 minutes [depending on thickness of slice]
- . Cool on cookie sheet for a few minutes then remove to a cooling rack
- . Note: To ensure the logs are ‘round’ Save the cardboard center from a roll of kitchen paper, slit it to open then place the log inside before chilling.
