Gluten-free Chocolate Chip Cookies

Ingredients

  • 1 cup soft butter
  • 1 cup sugar
  • ¾ cup brown sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 ¾ cups Gluten Free flour (we used Cup 4 Cup brand)
  • ½ teaspoon salt
  • ½ teaspoon baking Soda
  • 1 cup chocolate chips
  • ½ cup Cultured Cup drinking chocolate
  • ½ cup currants or raisins or craisins

Directions:
  1. . Preheat oven to 350
  2. . Beat together the butter – sugars until light
  3. . Beat in the eggs and vanilla
  4. . Stir in the gluten free flour – salt and baking soda and mix until well blended
  5. . Stir in the chocolate chips, drinking chocolate and your choice raisins or craisins
  6. . Place rounded tablespoons of batter onto greased or parchment paper lined cookies sheets
  7. . Bake for about 10 minutes or just until browned
  • Note: This produces a fairly soft cookie – for a crisper result bake 3-4 minutes longer. Cool on rack
