Fresh Melon Chunks And Raspberries in Provence Vert Marinating Syrup


  • Half melon cut into small chunks
  • 1 punnet raspberries

Marinating Syrup


  1. . Steep tea in water 10 minutes
  2. . Strain tea into small saucepan
  3. . Add the remaining syrup ingredients
  4. . Simmer gently for about 15 minutes or until the syrup is slightly thickened
  5. . Remove from heat and allow to cool
  6. . Pour the syrup over the melon chunks and allow to marinate for at least 2 hours
  7. . Optional: Skewer the melon chunks with raspberries on cocktail straws (Do not use toothpicks)
  8. . Set back in syrup to continue marinating until serving
  9. . May be made ahead up to three days
