Fresh Melon Chunks And Raspberries in Provence Vert Marinating Syrup

Ingredients
- Half melon cut into small chunks
- 1 punnet raspberries
Marinating Syrup
- 2 cups water
- 2 Tbl Provence Vert by Mariage Frères
- 2 Tbl honey
- ¼ cup sugar
- Juice of 1 lemon or lime
Directions
- . Steep tea in water 10 minutes
- . Strain tea into small saucepan
- . Add the remaining syrup ingredients
- . Simmer gently for about 15 minutes or until the syrup is slightly thickened
- . Remove from heat and allow to cool
- . Pour the syrup over the melon chunks and allow to marinate for at least 2 hours
- . Optional: Skewer the melon chunks with raspberries on cocktail straws (Do not use toothpicks)
- . Set back in syrup to continue marinating until serving
- . May be made ahead up to three days
