Chilled Coconut Soup
Ingredients
  • 5 cups milk
  • 3 cups unsweetened coconut flakes
  • 1 ½ cups double strength Mariage Freres Noix de Coco tea cooled
  • 1 can coconut milk
  • ½ can crème of coconut
  • Lemon juice to taste

 

Directions

  1. . Heat the milk with the unsweetened coconut flakes in a medium saucepan and simmer gently for 15 minutes
  2. . Strain into a large bowl - extracting as much of the ‘milk’ as possible (note: the coconut can be reserved for another use)
  3. . Add the tea- coconut milk -and crème of coconut and stir well to blend
  4. . Chill the soup overnight
  5. . You will noticed solid cap of 'coconut oil’ has formed on top. Gently lift off and reserve for another use
  6. . The soup is ready to serve!
