Coconut Matcha Oatmeal


  • ½ cup quick oats
  • ¾ cup coconut milk*
  • ¾ cup cream of coconut*
  • Pinch salt
  • 1 cup cream
  • 1 teaspoon matcha powder
  • 1 Tablespoon shredded coconut (optional)

  1. .Place oatmeal and the coconut milk and cream of coconut in a microwaveable bowl and microwave on high for 1 ½ minutes. Stir.
  2. .Whisk the cream and matcha together and microwave on high for 1 minute
  3. .To serve : Spoon the oatmeal into 2 serving bowls – pour over matcha cream and sprinkle with coconut
  4. Note: * If you prefer your oatmeal less sweet increase the coconut milk to 1 cup and reduce the coconut cream to ½ cup
