Bohea Cheese Sables

Ingredients

  • 10 Tablespoons butter
  • 1 Tablespoon Bohea tea leaves
  • 1 cup flour
  • 1 cup grated cheddar or cheese of choice
  • ½ cup grated parmesan
  • 1 egg yolk
  • 1 tsp finely ground Bohea tea (optional)

Directions

  1. . Steep the tea in the butter by melting slowly in a small saucepan then allowing to cool
  2. . Strain off the tea pressing the leaves against the strainer to extract as much flavor as possible
  3. . Refrigerate until butter is set
  4. . In a processor combine the flour, butter, and cheese - pulse until a dough forms
  5. . Turn onto parchment paper and form into a log - shorter if you want larger sables and longer if you want smaller sables
  6. . Chill for at least 3 hours or leave for up to 2 days in freezer
  7. . When ready to bake...heat oven to 400
  8. . Slice cheese log into thin ¼" slices and set on parchment paper lined baking sheet
  9. . Brush with egg yolk
  10. . Sprinkle the sables with a little ground Bohea tea (optional)
  11. . Bake for about 10 minutes or until the sables are golden
