Angel's Kiss Cookies

Angel's Kiss Cookies


  • 3/4 cup flour
  • 1/2 cup sugar
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 2 tablespoons very finely ground Angel's Kiss coffee
  • 1/4 cup finely shredded coconut
  • 1/2 teaspoon vanilla
  • 1/2 cup butter, softened
  • 1/4 cup miniature chocolate chips


  1. . Whisk together the flour, sugar, baking soda, baking powder, and coffee
  2. . Add coconut and vanilla
  3. . Add the butter
  4. . Mix with electric mixer or food processor
  5. . Stir in the chocolate chips
  6. . Divide the dough in half and form each half into a roll about 8 inches long
  7. . Place each roll on a 12 inch piece of wax paper and roll up carefully
  8. . Chill in refrigerator until firm, about 1 hour
  9. . Pre-heat oven to 400
  10. . With a serrated knife, make 1/4 inch slices
  11. . Place each cookie onto a parchment lined shiny cookie sheet
  12. . Bake for about 7 minutes
  13. . Remove from oven and allow to rest (the cookies will be soft but will firm up when cool)
  14. . If desired, melt bittersweet chocolate; drizzle on top and sprinkle with coconut. Enjoy!
