Ingredients
Cookie:
- 1 ½ cups flour
- ½ cup confectioner’s sugar
- ½ cup sugar
- ¼ cup cocoa
- ½ teaspoon salt
- ¼ teaspoon baking soda
- 2 sticks [8oz] cold butter cut into 16 pieces
- 1 Tablespoon strong coffee [your choice]
- . Whisk together the flour, sugars, cocoa, salt, and baking soda in processor
- . Add the butter and coffee and pulse until smooth
- . Place in refrigerator for an hour to chill
- . Preheat oven to 350°F
- . Spoon teaspoonfuls of dough onto parchment paper lined cookie sheet
- . Bake for 8 – 10 minutes
- . The cookies will be slightly rounded and ‘dry’
- . Set on cooling tray
Marco Polo Flavored Filling:
- 2 cups confectioner’s sugar
- 1-2 Tablespoons strong Marco Polo tea
Directions:
- Whisk confectioner’s sugar with tea to make a fairly stiff frosting[Add more tea if desired to get right spreading consistency]
- Sandwich the cookies with the tea flavored icing filling
Note: Cookies will be darker than in the image.
