  • 1 ½ cups flour
  • ½ cup confectioner’s sugar
  • ½ cup sugar
  • ¼ cup cocoa
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 2 sticks [8oz] cold butter cut into 16 pieces
  • 1 Tablespoon strong coffee [your choice]
    1. . Whisk together the flour, sugars, cocoa, salt, and baking soda in processor
    2. . Add the butter and coffee and pulse until smooth
    3. . Place in refrigerator for an hour to chill
    4. . Preheat oven to 350°F
    5. . Spoon teaspoonfuls of dough onto parchment paper lined cookie sheet
    6. . Bake for 8 – 10 minutes
    7. . The cookies will be slightly rounded and ‘dry’
    8. . Set on cooling tray

Marco Polo Flavored Filling:

    • 2 cups confectioner’s sugar
    • 1-2 Tablespoons strong Marco Polo tea


    • Whisk confectioner’s sugar with tea to make a fairly stiff frosting[Add more tea if desired to get right spreading consistency]
    • Sandwich the cookies with the tea flavored icing filling

      Note: Cookies will be darker than in the image.
