How to Steep: Western-style: For brewing, use 2.5 grams or 2 heaping teaspoons in 6 ounces of water at 200°F for 2–3 minutes. For Eastern-style preparation, use 5 grams or 4 heaping teaspoons, steep in 6 ounces of water at 200°F for 20 seconds, and add 10 seconds for each additional steep.
Fun Fact: The Rou Gui cultivar originated in Ma Zhen Feng (马枕峰) of Wuyi and has been cultivated in the region for several hundred years. In 1985, the Fujian Crop Identification Committee formally recognized it as a distinct cultivar and began promoting its widespread cultivation.
