Darjeeling Spritz

We LOVE this super easy cold brew tea as a mocktail! Darjeeling tea is nicknamed, the 'champagne of tea' so serving it sparkling in a flute is really a no brainer. The first flushes really lend well to cold brewing in sparkling mineral water. The fresh grape peel, subtle nutty, and crisp notes are complimented by the extra boost of minerals in the water.
- Get about a liter size of your favorite sparkling mineral water (We used Pellegrino)
- Pour about 1-2 ounces out of the bottle.
- Fill with about 16 grams or about half an ounce of loose leaf Darjeeling, like our first flush Darjeeling Castleton.
- Wait for 2-3 hours.Then strain the tea leaves out.*
- Get a champagne flute and put a little simple syrup at the bottom (optional).
- Top with chilled sparkling Darjeeling.
- Garnish with a couple berries or a rosemary sprig!
note: You can leave it at room temperature or in the refrigerator. You want to make sure you strain tea into another vessel after max 3 hours, if not tea will get bitter.
