Cooling Casablanca Iced Tea

Moroccan Mint tea is the national drink of Morocco. Mariage Frères makes an excellent homage to the beverage with its popular Casablanca blend. Traditionally, Moroccan mint tea is made using fresh mint leaves (which is swapped for dried mint in Casablanca).We reimagined the Moroccan staple as a delectable iced tea to combat our grueling Texas summers. We just love the essence provided by fresh mint, it adds an extra refreshing quality to the brew and hope you enjoy our multicultural experiment, too!  

Ingredients

  • 2-3 tbsp of Casablanca loose leaf tea by Mariage Frères
  • 4 cups of water
  • 1 tbsp raw sugar (or to your preference)
  • a large handful of fresh mint leaves

Directions

  1. Heat water in kettle to just off boiling (about 195-200F)
  2. In a small saucepan blend sugar and tea leaves*
  3. Add the hot water and bring the pot to a gentle boil 
  4. Remove from heat and add the fresh mint
  5. Let steep 3 minutes and strain out the leaves.  
  6. Stir vigorously then serve over ice. 
  7. Garnish with mint sprig


*Adding sugar at the beginning of the steeping process adds a more caramelized depth of flavor then adding at the end (along with using raw sugar, or you can substitute light brown sugar)
