Ingredients: Shade-grown matcha green tea from Uji, Japan
How to Steep: Add 1 tsp of matcha to a bowl. Pour 1 Tbsp of 160°F water on the side of the bowl opposite the matcha. Using a bamboo whisk, mix the water and matcha until a thick paste forms. Pour 2–3 oz of 160°F water into the bowl, but keep it away from the matcha. With the whisk, vigorously mix the water and matcha until a thick froth forms. Enjoy!
Fun Fact: Shading the tea plants reduces the bitter catechins while increasing chlorophyll and amino acids. These components increase the umami and savory flavors. This tea, known as "Koicha," which translates to "thick tea" in Japanese, is a style of preparing matcha characterized by its thick consistency. It is made with a higher ratio of matcha powder to hot water than usucha (thin tea), resulting in a more concentrated and intense flavor. Koicha is traditionally prepared for the Japanese tea ceremony or other special occasions.
