  • 1.5 tsp per 8 oz of water, 195°F, 3.0-3.5 min. Three minutes and fifteen seconds is usually ideal. This delicate tea can become too astringent if over steeped.

    • Grown at the Risheehat Estate, in the mountainous Darjeeling region of northeast India
    • This complex tea produces flavor notes of crisp, sweet apple, muscat grape, and a delicate floral (orchid) finish. Adding to its depth, the Risheehat's hint of astringency buoys those mouthwatering flavors with a sharp minerality
    • The high elevation, volatile weather conditions, and early plucking (late March) each contribute to the benchmark flavor profile of a good 1st flush Darjeeling
    • We taste as many 1st flush Darjeelings as we can find as soon as they are released, and only select the one or two best every year
    • Because the growing conditions in the Himalayan foothills are somewhat intense (steep slopes, rapid changes in weather, thunderstorms), and because the entire Darjeeling region is no larger than two Manhattans, the supply of first flush teas is extremely limited
    • Their rarity (and their deliciousness) causes the finest ones to be auctioned off at premium prices
