- To use a gaiwan, hold the entire unit (including the saucer and lid) in the palm of your hand and steady with your four fingers. Steadying the gaiwan with both hands, use your thumb to move the lid slightly so there is a small opening where the lid meets the bowl. This prevents the leaves from escaping the bowl, and you can either drink directly from the bowl or pour the tea into small cups.
