Mo-Tea-To Cocktail/Mocktail


  • 4 grams fresh spearmint leaves (no stems)
  • 5 tsp Sugar
  • 2 oz Light rum**
  • 0.7 oz Fresh lime juice
  • 1 Tbsp Kukicha Green Tea
  • 8 oz Heated, filtered water
  • 3 Ice cubes
  • 3 Lime wedges
  • 3 Extra mint leaves for garnish

**To turn this recipe into a Mocktail, remove the light rum


  1. . Place spearmint and sugar in a medium bowl
  2. . Using a muddler or large spoon, muddle mint and sugar until mixture is aromatic and oils are released
  3. . Add rum and lime juice to mint/sugar mixture
  4. . Stir until sugar dissolves
  5. . Press mixture through a fine mesh strainer to separate liquid from solids
  6. . Chill mixture until cold
  7. . To make tea, add 175℉ water to green tea
  8. . Steep for 3 minutes
  9. . Remove tea leaves from liquid
  10. . To quicken cooling, put tea in freezer for 15 min
  11. . When tea is chilled, add mint/sugar/rum mixture to tea
  12. . Stir until mixed
  13. . To serve, pour liquid into a short cocktail glass and add a large cube of ice
  14. . Garnish each drink with a wedge of lime and a sprig of mint
